So many eggs


Gotta figure out some recipes for them lol. We have 9 hens 1 rooster and they lay almost a dozen a day now. I'm seriously thinking about bringing some for the lady at my church that feeds the homeless. Honestly I didn't think they would stack up this much not to mention someone had the bright idea to get like 6 more chicks lol..

    Lots of ways to store them for the winter when the girls won’t lay.

    We just eat more egg based food in the summer too.

    Donate them. Or get a table at a farmers maker and sell 6 for $6.

    I had a Scottsman tell me that as long as eggs are not put into the fridge, they are shelf stable for months. Is this true?

    Baking, custards and desserts with meringue(to use both yolk and egg whites), omelettes, deviled egg salad sandwiches, seasoned pickled eggs. Eggs are fine cooked and frozen or if you have the money to invest, freeze dried.  Eggs freeze dry extremely well either cooked or raw.  Raw eggs scrambled, freeze dried and then crushed make a very convenient “instant egg powder” that can be vacuum sealed and resealed in canning jars for use throughout the year.  🍳

    We make a ton of scrambled eggs and use them for breakfast burritos and we freeze them. I individually wrap a burrito in foil and put in a gallon zip lock bag before freezing. When I reheat them, unwrap the foil and wrap the frozen burrito with a wet paper towel before reheating.
    It’s nice not having to think about what to have for breakfast, and you can make a lot of different varieties for your taste!
