I bought a pressure canner and chopped & canned a North Georgia Candy Roaster monster squash last month! It was hard like a Butternut but massive. The last of it I cooked into a “butternut squash soup” with some sweet peppers and then canned the soup in my pressure canner. Just pop the lid, warm & add cream. So yum! If I can get my hands on another one I want to pressure can squash and quail soup
