Principe Borghese is a famous heirloom tomato option if you want to make dried tomatoes (I would say sun dried but these were dried in my dehydrator). The flavor of this variety concentrates when dried and can store for a long period of time. I like to put dried tomatoes in a jar and cover with olive oil. I put the jar in my fridge so I don’t have to process or can things.
