i obtained these from a bouquet last week and didn't keep them in water… once i unwrapped the bouquet i noticed that the flowers aren't just stalks but have shoots and nodes too… is it possible to start my very own flower garden??

Extremely unlikely. Flowers take a lot of energy for the plant to produce. Asking the flower stalks to then also develop a new root system is an ask too much.
If you cut the flower heads off it may increase the chances a little, but probably not much.

Most flowers will root as cuttings though, if they are taken at the right time and from the right place on the plant. I’ve done this myself – fun project, but ultimately planting seeds / seedlings is far easier 🙂
