I’m going to be away for 2 weeks and I was wondering if you had any experience keeping seedlings alive without watering for that long at this size… I put them in mini-greenhouses to minimize water loss, but I’m still worried that they’ll dry up before I get back.

Yea you’ll be fine. If anything you could also poke holes at the bottom of your seedling tray and then put it in a shallow tub of water. This should allow water to continuously be absorbed by the soil keeping them hydrated.
But I think I’ve left my seedlings at this size for a couple weeks without watering and they all survived.
