Those are chunks of stuff all clumped together. Usually, for me, they are vegetable scraps that got pressed together during turning. I put on gloves and break them apart.

They’re actually not a bad thing, allows for some colonies to form on a nice thick layer of biofilm and it locks up excessive moisture
