Bamboo. Peel outside layers until it’s white and fleshy. Easiest way to eat it is to parboil/blanch, let it cool then cut into thick slices. Eat with Mayo.
Most choice varieties are crunchy and slightly sweet. Similar to heart of palm.
I personally like them in green curry.
