What’s growing out of my compost?

I had a “compost” bin going for several months (I did not water or turn it regularly, only dumped kitchen scraps), and unfortunately had to remove the bin from my yard as we were re doing our landscaping. I salvaged as much as I could in this trash can and it’s been sitting for a little over a month. These started spouting up and I decided to just leave them be. Does anyone know what this is? Location is west central FL, USA.
