It’s an horrible day today it’s throwing it down  and it’s going to keep on raining for days to   come and it’s started to get a little bit cooler  because it’s Autumn and what better time to put   together a really hearty tasty vegetable soup  we’ve been harvesting lots of vegetables from  

Garden over the last few months and a portion  of that has been blanched and froze so we can   just take take out what we need as we need it  I’ve also got some of these These are packs of  

Pure tomato sauce that we extracted from his  Italian plum tomatoes so I’m going to be using   that as a stock but you can swap that for a tin of  tomatoes and a bit of vegetable stock we’ve also  

Got biks of Frozen carrots and potatoes basically  everything we’re going to need and I just need to   add a couple of extra things to these and we  can get started so to start off with a couple   of sticks of celery there’s no measurements for  this recipe and that’s because people will need  

Different amounts so just adjust it to suit  yourself so I’m just going to split those down Center and then we’re going  to chop them into little pieces and make this soup is chunky if you want we’ve also got some nice chunky pieces  of carrot there as well but I think some of  

These I’m going to cut into smaller pieces  I want everything in proportion for this suit and then we’ve got some frozen potatoes  these are just defrosting so we’ll let   those finish off and then I  might chop those in half as well and the same with these

These are left to go in last because they’ve  been blanched and Frozen so they’re already   part cooked and if we put them in too  soon they’re going to start falling apart then we want an onion  and this is quite a big onion so we’re going to cut this into Qui big chunks

I’m just going to thinly slice  a couple of cloves of garlic as well I’m also going to be adding a few peas  as well and some sweet corn and that’s all   that’s prep done so now we’ll make the  soup and we’re going to do it on a low  

To medium heat and I’m going to add just  a little bit of olive oil to that pan and   then we’ll get those onions in and at  the same time we’re going to add those carrots and that celery and we want  to cook this slowly just to soften

Everything these have been cooking for a few  minutes so what I’m going to do is I’m just   going to put a lid on and sweat them vegetables  just a little bit and that’s going to help  

Soften them few minutes later we’ll add that  garlic so we’re going to add a bit of salt to this and we’re going to add some black  pepper as well or you could use white pepper you only want about half a teaspoon of  each and then about a teaspoon of mixed herbs  

That’s going to add a nice bit of flavor to it  so we’ll just keep cooking this for a couple more   minutes it already smells amazing that veggie  is done now so we’ll add as own made tomato sauce and we’re going to drop  that sweet corn in as well now

And this peas and as I said we’re putting those  potatoes in later because they are already part   cooked since we blanched and Frozen but that’s  going to make a nice amount of soup and if you’re   interested in seeing how we make us tomato  sauce we have got a couple of videos on that  

And I’ll put a link to one of those videos  at the end of this one so I’m just going to   bring this to a boil and then I’m I’m going to  simmer it for about 15 minutes and then we know  

Everything has properly cooked through so we’ve  got that up to a boil so now I’m going to simmer it by doing that we’ll thicken it at the same  time if you do make tomato soup from onr grown  

Tomatoes you’ll want to add a tablespoon or  so of sugar to it just to get rid of that acidity this next part is optional  but I like to give it a little bit   of a Kake so I’m adding just under a tablespoon of paprika and we’ll also add those potatoes in

There this soap looks amazing and I’d say at that we’re done beautiful now it’s time to serve  look at all that chunky vetch brilliant full the nutrition we’ll make sure we get a  nice amount of that sauce as well nice a big bow of suit and there’s loads left definitely worth the

Effort it didn’t take long at all to make that  amazing vegetable soup and virtually everything   that we needed to make that we grew in his garden  over the last few months so it’s a very nourishing  

Filling cheap meal and we made a big pan of  that so we’ve got loads that we can save for   later but what does it taste like you can’t do a  soup test without a piece of bread let’s try that sauce that sauce is so good I want to try a bit of  

This FEG so we’ll get a carrot  and a bit of potato at the same time perfect so if you’ve got some packs  of frozen tomato sauce now you know exactly   what to do with them through cold and Ms  you can’t beat homade vegetables soup if

  1. We have freezing rain and snow today in Texas. Horrible weather. I love vegetable soup. I like to make it and freeze some for later meals when I don't feel like cooking but want a good hot meal. I'm making chicken and dumplings today in this cold.

  2. I also add a good handful of parsley, home grown of course, or even coriander. Love home made soups.

  3. Lovely! I love making soup in the dreary weather. I'm so glad to see a proper serving, too! I can't get over tinned-soup manufacturers thinking a serving is half a can! I mean, half a can for which toddler?! 😂
