Slow Cooker Vegetable Barley Soup

1 bunch green onions chopped
1/2 cup red pepper chopped
3 garlic cloves minced
2 Tablespoons olive oil
1 cup carrots chopped
1/2 cup frozen sweet corn
1/2 cup frozen peas
28 oz diced tomatoes
6 cups vegetable broth
1 teaspoon Hungarian paprika
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh parsley chopped
1/2 cup pearl barley rinsed and drained

Instructions
Saute 1 bunch of chopped green onions, 1/2 cup chopped red bell pepper and 3 cloves of minced garlic in 2 tablespoons of olive oil.
In your slow cooker, add the sautéed vegetables, 1 cup each of fresh chopped carrots, celery, broccoli and zucchini, 1/2 cup each of frozen sweet corn and peas and one 28 oz. can of diced tomatoes.
Pour over 6 cups of good quality vegetable broth and stir it all together.
Add 1 tsp. Hungarian paprika, 1 tsp. salt, 1/2 tsp. dried dill weed, 1/4 tsp. pepper and 1/4 cup chopped fresh parsley.
Stir it all together and cook on HIGH for 3 hours or LOW for 6 hours.
Rinse 1/2 cup of pearl barley under water and drain. Add the rinsed pearls to your slow cooker and cook on HIGH for 1 additional hour or LOW for 2 additional hours.

Market and with the way the economy is we would be really foolish to move because it costs so low to live here and it’s paid for so what I thought we will do is instead of moving as of now this is my thinking I’m going to build up

Business and our whole family was but he did a lot of subcontracting out so my husband did the painting and our children we did they did painting they did carpet work but all of like plumbing and electrical and all of that was subcontracted out to you know

Professionals so he never had had that hands on of knowing how to do certain things but that makes it more expensive so we’re still working on the outside of our house and then we will start doing more cosmetic things but I am an old soul I don’t mind having the

Old windows that you have to use something to prop them up now he’s a little different he likes things newer all those years that we hauled water out by hand because we didn’t have proper Plumbing I loved it I had no problem with it whatsoever but he wasn’t quite

As interested in it as me that’s usually how it works you know but I am very thankful that he is extremely moneysaving and so we don’t have that like this you know with a lot of marriages with people he’s just like me when it comes to trying to think outside

  4. I know what you mean Tessie, about the economy. I’m heading into my retirement fixed income years in a few and can’t believe how how everything keeps getting more expensive. After my major pipe disaster last summer I look at spending through a different lense now. I had been saving for a shed and greenhouse but realize now that is out of my reach and instead just purchased a soft covered greenhouse which will suffice for both. I joke as well some day if I hit the lottery…only I’m like you guys..too tight wad to play lol! It’s all good though as I’m enjoying my life in these little moments and learning how to make my money stretch even further than I ever thought possible. ❤

There's always something to be grateful for. Thanks for the gardening book recommendations! This year, I'm starting more things by direct sowing. I have a few vegetables I'll start indoors (like tomatoes) or in my little greenhouse, but I'm going to give direct sowing a try for a lot more (especially peppers since the seedlings always flop).   8. I found that an easy update and refresh is painting. I go some really nice and expensive paint at a yard sale for $5 a gallon, which I've used to update my railings, clothesline, inside of garage, and a lot more.

  9. I do not live in an area like you. I don't really have a lot of trees near me. I do have more wild life than I would expect in the city. Of course there are squirrels and raccoons, but I've had a ground hog running around and last year I had a family of skunks living under my porch. I think they will be back this year. I've seen them around.

    I was all in the construction business. I've learned so much.
    I didn't have plumbing, stove, washer or dryer when I was raising my children. I cooked on woodstove and outside grill. Hand washed all clothes.
    That's probably why I feel so close to you. ❤❤❤

  13. We bought our house 22 years ago also thinking we would someday move and it wouldn’t be our forever home. It will be 100 years old this year and is it very nice wood sided house that we put a lot of time into to make it the way we wanted it ,and we have a lot more to do but it’s cheaper than buying something new. 3% interest we refinanced it down and we’re happy to stay here probably forever. We’re just going to continue make it the way we want it !
    We are retiring this year and couldn’t imagine trying to start over with an expensive mortgage today!

  16. Hi Tessie! Noticed your diamond on your wedding finger. Did you find your husband's engagement ring that your mother in law lost? Sounds like you have a plan. Can't wait to see your garden come together. We are having soil problems or grub problems. The last two years half our plants died. Any ideas about what could be going on?

  17. Tessie, you could surround your garden with a living fence or even use all of your branches and even ask neighbors to save branches to make a crude rustic fence. Anything that looks "hectic" terrifies deer. You can then plant flowers all around the perimeter right inside that fence with loads of sunflowers and that will be extremely hectic for deer. They can't "see" a way in. The sunflowers will keep the birds, bees, and squirrels busy as well. Plus, those will cost hardly anything, especially if you save sunflower and flower seeds. I had Cosmos that got over 8 feet tall last garden season. I can also see loads of vertical garden space. You actually have quite a bit of land space, you could even expand your garden and add container gardening in cattle mineral buckets with drainage and converted kiddie pools. There's all sorts of things that you can do to expand on and make what you have even more gorgeous and productive than you already have. But, I seriously love your place. I grew up in a mobile home not much younger than yours and it is still standing after being through 2 floods and having a tree fall right through the middle of it. A big tip…attack your decking with Thompson's water seal and maybe even paint it to keep from having to replace your decking. Then you will only need the rest of the frame to make that greenhouse you want. Save old windows, get old windows from Habitat for Humanity, or any yard sales, estate sales, and the same for the framing. Keep your eyes open to Facebook marketplace listings for wood, old windows, etc., and make yourself a rustic lean to greenhouse exactly like what you're wanting, because you know what, you can always paint the framing. But, rustic is what everyone wants these days. Flowers and plants always make anything look better.

But we're working on so much to be much like you both. Someday, we'll be that way. But first we must meet other goals that are more important and knocking out debts first.
