This is the basis for the peppers in oil, however I was using a different kind:

Basic Fridge Pickle Brine:
1 C. Vinegar (I use Apple Cider Vinegar)
1. C. Water
1 T. Kosher Salt
Optional: sugar ( 1 T or so), garlic cloves, red pepper flakes, onion, peppers, allspice.
