Gary Pilarchik: Lettuce, Spinach and Greens Can Handle Frost

I wanted to show you how my greens frosted and froze in the morning and how they looked after they defrosted in the afternoon. They survived! Cool weather vegetables like lettuce, spinach, arugula and even cilantro can handle a light frost. Many greens have a cell structure that doesn’t burst from forming ice crystals when they freeze. Greens can be planted in the spring and fall.
