If your in garden zones 8-11, you can sill plant a ton of herbs from either seed or transplant. Take advantage because they thrive in the warm winter conditions of the Southern parts of the USA. The only word of caution is that they can die if exposed to freezing temperatures. Therefore, I recommend you either have a plan to cover them or grow them in containers and bring them indoors. Many herbs are perennial and will continue to grow for many months if you can get them to survive the coldest days of winter.
