One Yard Revolution: An Early Harvest of NEW POTATOES for Homemade Vegetable Soup

In today’s video, I harvest new potatoes and an assortment of other vegetables and herbs for a homemade vegetable soup.

This is the basic recipe I followed. Of course, you can use different vegetables and herbs based on what you have available.

Simple Vegetable Soup Recipe

Ingredients from store:
Vegetable broth (enough to cover vegetables)
1 small onion (diced)
2 large tomatoes (diced)
Salt and pepper (to taste)

Ingredients from garden:
4 cloves garlic (minced)
6 small new potatoes (diced)
6 small turnips (diced)
6 small carrots (diced)
2 cups peas
1 cup green beans
4 tbsp Basil (minced)
2 tsp oregano (minced)

Place all ingredients in a large pot and cover completely with vegetable broth. Season to taste with salt and pepper. Cook on low until vegetables are tender/crisp (al dente).
