  2. So glad you are safe. We are in Gastonia NC and we just got the heavy rain. I grew up in Miami,Florida so I am use to tornados and hurricanes. I don't like them but I have been through some.

    Thought process for finely dicing the peppers before you ferment. The color will be much nicer than blending them all together to a brownish puree!! Get some rest tonight and decide tomorrow morning!!

  6. Wow, Jess, you got more rain in this video than i did for the whole hurricane here in ocala fl. (It barely missed me, but the bands were favorable for my area, so not much wind or rain.)
    God has blessed us both!

  7. We're in Sw Fl and Ian went directly over our house. We were a bit worried but I was able to work in the garden in lovely 80 degree weather lol. The rain came in hard and heavy but no damage. The VRBO we were going to stay at for Thanksgiving got hit really hard and had 5+ inches of water inside the house. A major hurricane has literally never hit that area of Florida and they have so much flooding 😢

  11. I made a fermented Serrano pepper relish this year with some surplus serranos my neighbor gave me. I put it on everything. It would be really pretty with the 3 colors 🙂

  12. We were blessed this go round in Lexington county. I want to know how you get your peppers to grow shorter and full. I understand topping or maybe I don’t. Yours are always so lush and full.

  14. I'm so glad y'all are safe. I love the idea of a pica de gallon type ferment. I'm up to my eyeballs in peppers and have already made several jars of our fermented "wildfire" sauce. I hope you had a fun trip!
