Turning Broccoli Failure Into Success! Zero Waste Harvest | Zone 5 Gardening

Our broccoli did not form good crowns, but we aren’t wasting any of the plant during this harvest.

When we left for a two week vacation, our broccoli had not formed any crowns, but by the time we returned from the vacation, the crowns had already formed and begun to sprout. Normally this looks like broccoli failure, and I think many times we would be inclined to compost the entire plant and just start over, but with broccoli, that isn’t necessary at all.

Broccoli crowns that are going to seed are still edible, broccoli leaves are delicious, and the broccoli stem is also very tasty. In this video, we show you how we are going to use every part of the broccoli plant, and any leftover parts that may be too woody are going to go into our worm bins or our compost bins.

So, if you have ever wondered: Can I eat broccoli leaves? Can I eat broccoli stems? or Can I eat a broccoli crown that is going to seed? The answers are yes, yes, and yes. And on top of that, broccoli can be eaten as broccoli sprouts and broccoli microgreens.

This is an amazing plant, and you can easily turn failure to success!

  1. The stems, when they are tender, oh man, are they tasty.
    Aphids killed my dreams of any brocolli this year. My own fault, was not keeping a eye on my edible children.

  2. Excellent, informative video! I never thought of submerging broccoli into salt water to make pests crawl out. I will absolutely try that when my local farm market has brussels sprouts. They are a fantastic deal, especially because I have had no luck growing them myself, but they are always loaded with bugs. I'm guessing aphids.

    I love using every part of the plant. I throw tough stems into the stock pot. Sometimes I fish them out after a few hours and at that point they are actually edible.

    I remember being a child and my mom telling my doctor that I loved to eat broccoli, which most kids despise. Evidently, kids have more taste buds than adults, which the taste seem stronger to young'ns. 😊

  3. Never thought about eating the leaves, will have to give that a try. I bought a portable chicken run (mesh enclosure with zip up sides) and have all my brassicas growing in it this year. I no longer have to worry about little green worms in my food since the cabbage moths can't get near them and the mesh gives a bit more shading which has been helpful in all the heat this year. Highly recommend covering the brassicas!

Great video, I was wondering if you knew anything about purple sprouting broccoli, started growing indoors and I have a healthy looking plant, days to maturity says 120 days, Im about 90 ish days and no sign of sprouts. I also read that you need to put your seeds through about 6 weeks of cold stratifying (which the packet said nothing about uuuhhgg). What's the chance of getting sprouts? Here in MN first expected frost is Sept 30th
