The Magic of Purple Runner Beans – Revealing the Green Chlorophyll

Purple runner beans turn green when cooked. Here’s why.
The surprising transformation of purple beans into green ones happens as hot water breaks down the anthocyanin pigment, revealing the green chlorophyll underneath. So remember, don’t judge a bean by its colour… there’s more to these humble legumes than meets the eye! 😉

  1. For anyone that doesn’t know: It is generally discouraged to eat green beans raw! Raw green beans are indigestible/borderline poisonous. It varies from person to person. They should be heated to inactivate the Phasine that causes the troubles. Especially for children, who are smaller and more sensitive, eating raw green beans can result in serious consequences.

  2. I don't like them, getting the bean is a pain in the ass compared to other beans, and I can't store the seeds as well compared to other beans variants. It looks really cool and grows bush but I don't really see the value of it in comparison to other beans. (It's really hard to get it out of its case compared to other beans. Grown it 3 years now. Will do it again this year but just to keep the seeds up to date not to eat it….
