The Edible Air Potato is a climbing vine of the true yam family. It is cultivated to be non-toxic and has been selected for large edible bulbils. Much less invasive and vigorous than the naturalized varieties in the South. I have talked with people that say it is hardy to zone 7, so it will be marginal for my area. I was able to find two varieties named ‘Africa’ and ‘Hawaii’.
