– 1 can of palm hearts (approx 410g)
– 1 can chickpeas (approx 400g)
– 2 cloves of garlic (or more muahahah)
– 1/2 white onion
– 1 spring onion
– 1 small lemon juiced
– 2 nori sheets (ripped to small pieces)
-1/4 cup vegan mayo
– 1 cup bread crumbs
– 2 tsp fresh dill ( & more!)
– 2 tsp parsley ( or more! )
– 3 tsp cornflour
– 2 tsp cajun seasoning (or paprika etc.)
– 2 tsp dijon mustard
– oil for frying

this reminds me of holidays with my grandparents who live in Dorset, by the coast in the south west of England. they have a vegetable patch in their garden, with raspberries, beans, carrots, potatoes, and my nana would always make blackberry crumble (that's like a staple dish in the household) they also live about 10 min walk from the beach so most holidays we'd visit and take our buckets and spades and make sandcastles and go body boarding, and I remember- one of the calmest and most happiest I would be, is at my grandparents house, with the wooden treehouse, that they made for me and my cousins, and the sun shining the air just smelling clean and..green, and the bells of the church which was about 2 mins away, playing for a wedding or to announce the hour, or just the bell ringers practice, just lying on the grass and being able to breathe 🙂
