First year gardening in a small plot. Pulled out our carrots and most were normal but the one on the end was massive (pruners for scale). The carrots were a bit crowded so the grooves are it growing around other carrots (at least I think) but that doesn't explain the thickness. Just curious about if it was safe to eat, only half bragging but genuinely don't wanna eat or give away anything harmful

    Safe, sure.

    It’s likely woody and unpleasant, but safe.

  3. Generally speaking veggies are safe to eat unless they’re rotting. A lot of pests (like aphids) or diseases (like potato scab) don’t hurt the edability as long as the veggie itself isn’t rotting from the disease. That’s not universally true, but it’s mostly true. Yes, it has a few scars, but those aren’t harmful. Just wash it off. It also doesn’t matter that it’s gotten bigger. Are bianualls, and will grow until they bolt in the spring of their second year. My carrots usually look like this in fall until early spring. I keep my carrots in the ground, and only pick them as I need them. Contrary to popular belief, I’ve never found large carrots to be woody unless the carrot is bolting.

    Should be nothing wrong with it at all. I had some carrots the size of my forearm this year, they went bonkers. The parsnips were even bigger. Both tastes great and last many meals.

    These weirdos are perfect for stock.  Green tops and all. Make chicken and / or veggie stock with them. Freeze them for next time you make a bulk stock.
