    To each his own, but I’m with the traditional harvest method. The seeds are also bigger when the pepper is fully mature, and the flesh is less crunchy.

    I pretty much harvest all my peppers when red. Much more fruity in flavor, I’m with ya on this.

    Are they hotter when red or still just the roulette wheel of hot like normal?

    I blister mine then pickle them, and without fail, the reds are always better in my opinion! I like to include greens too as they do have a different flavor, but if I’m just grabbing one from the jar to munch, it’s red.
