I admit I had to look up the part that was missing, I had no clue it was called locular gel thought it was just the slimy seed part. But really, what is happening and how do I resolve going forward or how do I avoid it happening in next years crop?

Which variety is this? There are several paste tomatoes that are prized for their lack of gel. My San Marzanos are practically hollow. Much easier to turn into paste!

Well TIL what locular is, thanks!

Mine were like that this year. All my neighbors and NC 7b homies had a terrible time with tomatoes. Mine grew after everyone else’s died off early, but they aren’t good.

Repeated heat waves followed by torrential rains.

The volunteer cherry tomatoes are all over the place though, and they’re great!

Could be incomplete pollination, especially if you had hot, humid, or super still weather while it was flowering.

Happens in some varieties, made worse with not enough rain.

Looks like a ripening disorder, maybe internal whitening. I call this the bell pepper effect
