I’m making my first paludarium and have made the background out of carbonized cork sheets. I glued them together and carved them into various features. I noticed that a lot of people seem to glue coco coir and sphagnum moss all over their background. Is that something I should look into doing?

It looks good. Don’t try to do everything right now. You can come back after you add more feature.
This is my first paladarium (half finished rn) But i just added soil, bark and moss alongside coco chips
