I got these two as a cutting maybe 1-2 years ago. One (the lighter one) is right in front of a north facing window, has grown the most and even has a peduncle but I have noticed that she’s gotten lighter? The other one is maybe a meter away from a west facing window, hasn’t grown much but kept her’s beautiful dark colors. Is it the sun? (I haven’t checked the roots yet)

Less light = darker green
Yes, high light usually gets you smaller leavers, lighter colored leaves/yellower, but more growth. On the reverse side, lower light will get you darker, larger leaves, but slower, and maybe less likely to bloom. I do not think this is universal to all plants, but does apply to most hoyas in my experience.
