Cat for scale of course. Turns out she's a badass that isn't afraid of those darn cukes!
I hope I can find a use for them because it's a lot for me alone. I didn't expect to harvest this much at once lol, my cukes from last year barely produced anything.

So far i’ve made refrigerator pickles, tzaziki sauce, pasta salad with both cukes and zukes, zucchini bread, grilled zucchini, and zucchini bird’s nests. I’ve eaten a lot of sliced cucumbers with dips. Chopped a bunch of zucchini up and froze it for future sheet pan meals, too. Next I’m go
nna try freeze-drying cucumber chips after sprinkling with salt and vinegar seasoning to see if I can get a shelf-stable crunchy snack.
It looks like the inspector is happy too!
Congrats!! My cucumbers have been out of control this year!! Lots of people are getting cucumbers from my garden, my kids and I can’t eat them fast enough to keep up.
It’s a great problem to have 😁
