First year trying potatoes. I watched a lot of videos and thought I knew what I was doing. These little sprouts took probably 4 weeks to get this far and they don't look like the long shoots from the videos I've seen. Also the sweet potato is growing a lot of roots (normal?).

Can I still break the shoots off and put them in water to root? Put the whole thing in the dirt? Or compost it and try again next year?

I only saw one, but now see more mold on the slips

Also why are you growing this like an ornamental? Has it had a lid on it?

It’s growing fine. You can cut up the sweet potato to plant the slips separately or plant the whole thing in the ground.

If you can find one without mold on it, I’d twist it off and root it in water. I always make slips from a potato suspended in water rather than in dirt and slips start to root quickly in water once twisted off the potato.
