I loved Armenian cucumbers when they actually grew for us a few years ago. Did cucumber sandwiches, and my go to was a sort of cucumber salad that included onions, feta, and garbanzo beans.

I usually just slice to cubes, add diced tomatoes and sliced onions. Mix with Italian dressing and chill. Nice cold salad mix in the summer.
