Peppers can be picked at any time. The flavor changes as it matures from vegetal green to sweeter red, orange, or yellow. If you’re able to let it ripen more, then you’ll experience a completely different flavor profile.

  2. Don’t you want it to turn red? It will get sweet. You can pick it now, but it will have a very different taste

Not at all the same situation, but reminds me of a story (if you knew me, you’d know most everything reminds me of a story)

Years ago I was in a community garden. I’d had a few peppers that ended up needing significant recovery time early on and one in particular was a pretty small plant when it kicked out it’s one and one only pepper of the season- but it was massive, covered the palms of both hands. However, I was waiting to pick it because it was a red bell and hadn’t yet started turning color. Just as it started, someone took it! They later admitted to it and apologized saying, “I just thought you weren’t seeing it and it’d go to waste.” smh no, it was pretty damn hard to miss, that’s why YOU saw it.
