I'm doing the same exact thing before I leave this week.
I installed drip irrigation with a timer because I was concerned about this exact topic. It seems daunting but after doing a lot of research I gave it a try. Looking forward to how it works out.
I don't usually mulch because the slugs are so bad here. This year I did, and I haven't had to water since, I almost wonder if it's working too well, but the plants don't look sad. Used hemp animal bedding, no sprays, actually zero seeds unlike most straw.

As soon as you said potatoes are always supposed to stand up and flopping over was a sign they needed water, I rushed out to water my flopping potato plants! 😂 Somehow I missed that in potatoes 101 last year. I thought they just naturally did that as they got older or they were wilting because of the heat like dahlias do😅, and this year it still appeared so because I'm growing an earlier maturing variety and a late one, and only the earlier maturing is flopping. 😅 NOW I KNOW! THANKS!!!
