BIRMINGHAM, Ala. (WBRC) – Mark Giorgi joined WBRC 6 News at Noon to make Hilton Garden Inn’s Roosevelt Gazapacho. This delicious dish is refreshing this time of year!

Roosevelt's gazpacho at Hilton Garden InnRoosevelt’s gazpacho at Hilton Garden InnIngredients1 28 oz can of San Marzano crushed tomatoes 1 red bell pepper, cored and coarsely chopped 1 sweet yellow onion, chopped 1/2 cup of bread crumbs 1 tbsp of garlic 1/4 cup of extra virgin olive oil1/4 cup of red wine vinegar Pinch of salt and pepper2 tbsp of cilantro to garnishDirections Place tomatoes, bell pepper, onion, garlic, bread crumbs and chop all until smoothAdd oil, vinegar, salt and pepper. Pulse for a few seconds to mix well. Ladle into serving bowls and garnish with pepper and cilantro
