What variety are these? Have you pruned too much?
Indeterminate tomatoes can handle pruning, even benefit from it. But aside from the lower leaves below any potential fruit you don’t need to prune determinate varieties.
The lower branches/ leaves being pruned provide better airflow and reduce disease pressure a bit.

is it still safe to eat? I can imagine just making fried green tomatoes and rolling with it.

You can put up a cloth screen to provide sun filtration. They’re made for greenhouses and come in different strengths. Put up with t- posts like a fence to shade.
