I think this is some type of echeveria. It was in a bouquet and had a stick screwed into the bottom of it to hold it up. What can I do to save it? Or should I just use the leaves to propagate it?

You can pop it right on some dry well-draining succulent soil and wait for it to grow roots! I had an Echeveria Lola that grew roots right from the head of the succulent just like this and it’s thriving. No water until roots have grown so just check on it every so often to see if new roots have formed. Once they do you can give it some water 🙂
