First timer. “We have shoots!” has become “Oh, shoot!” It’s still way too cool outside. How do I care for these until I’m able to give them a proper outdoor home? Is it safe to water once I see sprouts? Any input or resource suggestions would be very, very much welcomed.

This is an automatic reminder regarding r/dahlias Rule 3:
When reasonable*, posters should make a good-faith effort to identify which variety/varieties are shown in their photo(s). If you don’t know for certain, please say so. Someone will usually know!
*Common-sense exceptions to this rule will be honored, such as if the photo does not contain a blossom, or if your photo contains large volumes (such as in wide field shots).
If you’ve already done this, thank you! No further action required.
If not, please add a reply to this comment and confirm if you know the name of your dahlia variety/varieties shown in the photo(s). Alternately, if you’re uncertain of the variety name(s), it’s ok to say that, too.

Yes, you can water lightly as the sprout emerges. It will develop more and more roots as the plant grows in the pot. The more green plant above, the more roots below. The roots will need water.
It’s easier for me to judge how much to water because I start mine in clear pots, so I can see the roots. I do water along the side so the water gets to the roots without soaking the tuber.
They need light now! Get them under grow lights. Eventually harden them off and plant outside after the last frost.
How cool is it? What is your overnight low?
