It got spider mites a while ago so in panic i threw out the soil and it have just been sitting in water while i treated it with a Neem oil solution, it seems to have worked and is clearly thriving. Now i'm wondering if i should pot it again and where should the soil end with all of the new sprouts coming?

You don’t have to panic every time they get a pest 🙂
Just take it outside or in the shower and rinse it down the treat. You can repot
