We've just moved into a house with a lot of different fruit trees, including a pretty big Banana plant. Have never even really gardened before, so there's gonna be a bit of a learning curve.
There is a bunch on this tree that is starting to yellow? Are these ready for harvest?
From what I have found, it seems ideally they would be cut down before now. Additionally, I want to check that we should cut down the whole 'tree' after harvest? Any other tips or resources about bananas (and other fruit trees) would be greatly appreciated

Yes take them of the rest will ripen off the plant. If you leave them the local wildlife will get at them if they havent already. Also now you have the joy of cutting out plant and disposing of it, remember you need to cut the core out otherwise it will rot and potentially infect the new shoots
Cut them down at the main stem, about 300mm above the top bananas. That’ll give you a nice “handle” to manage them. I tied mine to a rafter under my carport and they ripened quickly, mine were greener than yours so get cracking. I cut down the banana palm as it won’t produce fruit again.
Where are you located? Curious as I’m considering growing bananas in newcastle.
