All the projects I've seen online for stone edged gardens seem to be for raised beds and I'm not sure where that is even safe to do. Does it even need to be raised and if not how far above the ground should it be? Is it safe to do along the fence or house? Need advice about what's practical and will look good.

You definitely do not need to raise the bed for a stone edged garden. A lot of the photos online are raised, but a simple border that sits just a few inches above grade is way more common and practical for most homes.

Along a fence is usually totally fine and can look really clean. Along the house can also work, but you want to avoid piling soil or mulch too high against siding or covering weep holes/foundation vents. I’d keep the finished bed level a few inches below the siding and make sure water drains away from the house.

For looks + practicality, most people only expose about 2–6 inches of the stone above ground. Enough to define the edge and hold mulch in place without looking bulky. If your yard slopes, a slightly taller edge can help keep things neat.

Personally I think the nicest looking beds are slightly curved, not super tall, and wide enough for layered plants instead of just a skinny strip against the fence. Much easier to maintain too.
