Am I weird for wanting to grow galangal or is the rest of the western world weird for not caring or knowing about this crop one little bit?

It's a staple for example in Thai cuisine, which I love, and it looks kind of like ginger, which is simple to grow, so how complicated can it be?

I tried a few times already from store-bought (read: refrigerated) rhyzomes over the years without success. This year I finally figured out the method: I put them in pure perlite and they quickly turned from pale white-pink to green, signaling that I was on the right track. Roots and new shoots followed.

This is the state of affairs as I move them into the garden. Whether they will thrive in my climate (7b) is another matter entirely (maybe this is where I discover why it's not a popular crop in this part of the world), but l'm already banking this as an early gardening success!

I have never eaten galangal that I know of. I have a ginger sprouted for the first time. I hope to move it between the house and greenhouse to keep it going.
