These have been in water for about 2-3 weeks now and all have nodes… Yet there's no real sign of root development. Any tips? Tricks? Changes I should make?

I see the start of roots there. Things tend to speed up after this point.
What are you doing with them? It’s easier to make suggestions if we know how you’re treating them now.
I see signs of root development. Is it close to light?
Keep em warmer.
Change out the water every couple of days if you’re not already.
