I like the idea of using the existing structure as a frame, and I need to get a new roof on it anyways. The walls are painted stucco, so I'm not sure the humidity would be great for it anyways?

    The humidity would damage your house, and north facing isn’t that great as it is usually if that’s the only sun it’s going to be getting directly… ideally you would want something without a roof as well.
    A “sun room” would probably be more practical, something climate controlled similar to the house, just get some houseplants to fill the space if you’re just looking for vibes…
    But an effective food producing greenhouse wouldn’t really be possible in that spot.
