Stress can induce flowering in plants, they basically try to finish their life-cycle, since things appear to not get better. Once this stress response has been triggered, it cannot be undone. If you harvest it now and cook with it immediately it will be perfect, if you wait you get the weird off-taste that older/flowering broccoli can have, nothing bad with it, tho, the entire plant is edible in all stages.

That used to happen at our old house. Sometimes, we’d just let it fully flower. The honey bees liked it but I do wonder about how the honey tasted…

After you cut it (now ish), watch for the side sprouts. You should be able to keep harvesting for weeks. The heads will be smaller, keep cutting them before they flower.

How are people comfortable eating broccoli that has been attacked by bugs? There’s just way too many little crevices that you would never find them

You’re basically just inside of the “cats eye” window. Those tight bundles of fluorescence are called “cats eyes” and are considered defects by commerical spec. That being said, eat it now. And don’t skimp on the stem, stems where the flavors at!
