That 1-inch beetroot top is NOT waste itβs a fresh salad
waiting to happen! π₯π±
Don’t toss the crown where the leaves emerge. Here is the
simple “Second Harvest” hack:
β
Place the beetroot crown cut-side down in shallow water
β
Set it on a bright windowsill
β
Refresh the water every 2 days
β
Watch new leaves sprout within a week!
Once roots develop, move it to a pot of compost. These
greens are edible, delicious, and can be used just like
spinach.
One beetroot. Endless greens. Zero waste.
