Don’t toss the crown where the leaves emerge. Here is the
simple “Second Harvest” hack:
✅ Place the beetroot crown cut-side down in shallow water
✅ Set it on a bright windowsill
✅ Refresh the water every 2 days
✅ Watch new leaves sprout within a week!
Once roots develop, move it to a pot of compost. These
greens are edible, delicious, and can be used just like
spinach.
