Is this little stem enough to keep the plant going?
This monstera esqueleto has grown quite a bit, but I'm wondering if I should chop it up where the stem thickens up, or this initial stem is good enough to keep it growing healthy.
its good as it is, no need to chop. feel free to chop if you’d like but you don’t need to. it’s quite common that in the wild they lose the initial connection to the ground, if there ever was one.

Its a vine it will be fine but if you are concerned replant it

When I’ve done a chop and extend before, I cut halfway on the plant. So I had a lower half and an upper half. The upper half I potted it up and eventually the roots took hold in the pot and it started growing again normally. Either way, it is fine now and seems healthy! Also, if the first pic is the plant you are referring too, I do not think it is an esqueleto unfortunately. Definitely a monstera but it does not look like an esqueleto to me.

With moss poles, the top of your plant is not supporting itself from the little stem at the base. If you’re watering properly, the roots for the upper stem will have grown into the moss and they’re what’s supporting the thick stem.
I would personally chop and prop, but that would be an aesthetic decision rather than something that will help the plant.
