For context, I planted this red onion a few days ago as it sprouted. However, there was a small bit of mold on the bottom before I planted it. I wiped it off and planted it, but now the top of the sprout has turned red. Is it dying, and if so, can I fix it?

just to clarify are you hoping to harvest onion seed from it for next year?
Contrary to what others have said, this is a fun experiment in gardening and can still produce edible goodies, not “just seeds.”
If you get it to kick out some greenery on the top, you can use it as a sort of onion green factory. The greens are edible and, not so shockingly, taste like green onion.
When you cut it back like this it has a hard time getting to the flowering part and instead just keeps pumping out new greens to try and get to there, until it dies or the soil gives up the ghost
Baked potatoes love this one simple trick.
