Don’t the seeds and skin make it bitter? I was taught by my grandma to always skin and take the seeds out when making pasta sauce. Leaving them in makes it necessary to add sugar

lol my problem is that they wont stay alive long enough to get tomatoes. even though i give them plenty of water.
2 cups tomato powder, 1 cup celery powder, 1 tablespoon onion powder, 1 teaspoon basil, 1 teaspoon of vinegar and then water until it's at the right viscosity and that's tomato ketchup made from all organic unperishables that you grew on your own land, the only thing I'm assuming the average household cant make is vinegar. The rest is viable to make and preserve if you have a slow cooker or an oven. Maybe an air frier if you're careful since an air frier is just a small convection oven.
Yes you can dehydrate them. You can dry many kinds of veggies and powder them. The skins have tons of nutrients and no bitterness. This is how I sneak extra veggies into my grandkids. Been doing it for years. Look up The Provident Pantry. She has so much info. Another thing, make apple scrap vinegar. Easy to do. Plus you will learn about scoby’s. ( the mother) Once you get that scoby going you will be using it to make tons of probiotic drinks. There are tons of videos about it out there. The rabbit hole is endless 😂
For those with freeze dryers – remember freeze drying doesn't cook things. If you want to make instant sauce from freeze dried tomato powder, you'll need to cook them before freeze drying.

I'm currently doing it with slabs of Costco tinned crushed tomatoes. I do trays with peppers and trays with onions added. Fantastic stuff.
I freeze tomatoes. Take them out and score the skin, it peels right off. Let thaw, chop a little, throw into spaghetti or chili.
I also give them to two neighbors. I over plant, in case I lose some plants, then I reap favors from the neighbors I shared with.
I still have last seasons tomatoes to process!😮
