Add a cinderblock(or 1.5 maybe?) to eack side to match the structure’s dimebsions. Looks like yer redoing the inner floor bricks as well.

I would tear out the entire foundation and build a proper one the right size. But that’s just me. You could tear out one end and add a couple extra cinder blocks on each side to add 2′.
It really depends what your greenhouse needs/requires.
Do you get alot of wind? Are anchors required?

I agree with the starting over advice. Correcting a misfit will often take more time and might never be right.
Remove the blocks, set in 4 pressure treated beams; level and you are done.
If high wind area, “stake” the beams with rebar driven into the ground at different angles.

I would rip all that out, build a proper anchor frame, level, sand, set pavers, set dg or peagravel and have a fresh finish.

The blocks are turned the wrong way. They sink into the ground faster than they would if they were on their flat sides. A crushed rock base will help.

if you’re going through all that work, why not make it bigger? i don’t mean double the size or anything but an extra two feet of width?

It was plenty big enough. it’s just a hobby greenhouse for starting seeds and growing strawberries. And we did go a lot taller with the new one. The other one was only about 6 feet tall and this one is nine. 2 feet wider and 3 feet taller buy us a bit more growing space.
