I do a lot of these kind of things by hand but that is a beast they have there. I would rent/borrow a farm jack and jack it out (look up how to do this on the Youtubes).
On the other hand if they go a little lower and cut it that suits most purposes.
Paddle bit, drill a bunch of holes, soak in kerosene, put a metal ring around it, and light.
Blasting caps
Keep digging out the root flares and sawzall them as you find them. Once you get some wiggle, if you can get a Truck and a chain around it that might be your best bet other than an excavator.
