I have always gone by the “when the roots have roots” rule when propagating, but this time, some roots started to grow, then immediately started growing roots off the roots, they are very short little roots though, so i’m not sure.
I have 2 at exactly this same point, are they ready to be potted?

Yes.. 1” of total root is all the visual evidence you need to put it into your potting substrate, I would say.
