About a month ago, I noticed a hydrangea plant that had been chopped up and left on the side of the road, roots still intact. It had been sitting there for 2–3 days. I picked it up, put the roots into a bucket of water, and then planted it into this pot.

Right now I can only see one or two small green leaves, which gives me a bit of hope.

Any advice on what I should do next to help it survive the winter?

I would just water it accordingly depending on where you I tend to keep it over the winter. Wait for spring. May add a little slow release fertiliser granules to the soil.
