How often are you watering, and how dry is the soil when you do? How much sunlight are they getting? What soil did you use?
One thing I would suggest is that it’s generally better to fill your pots all the way to the top with soil, when planting

Mine won’t stop growing, if it helps: It’s potted on regular potting soil mixed with lava rock, nothing more (seems to me that yours is more on the clay side), terracotta pot, next to a north facing window (southern hemisphere). I have to water it every 4 days or so or it starts slouching. If I had to change anything about yours it would be the soil, clay soil never worked for me indoors, even for plants that demand lots of water.

Lemon balm is a mediterranian plant that likes to literally bake in the sun… If you don’t have a balcony, can you somehow place it outside the window?
