    I always called them UFO squashes when I was a kid and still today. But it is called Pattypan and they’re pretty good. I think we usually chopped them into wedges and roasted them

  2. What you’re gonna want to do is chop that up and sauté it in olive oil with some salt, pepper, red pepper flakes, garlic, basil, parsley, and lemon juice.

    Slice it 1/2” thick. Olive oil, S&P, then grill on the BBQ. So good!

    I diced some into a tagliatelle dish and it added nice texture and sweetness, but it does need something savory for balance.

    Pattypan! Slice horizontally quarter inch thick slices, dip in flour & fry until golden brown, preferably in bacon grease or lard. Yum!!

    Pattypan squash. My mom used to slice them and dip the slices in beaten egg and seasoned cornmeal, and then pan fried them until crispy. I wasn’t terribly fond of it as a child, but it’s the sort of thing I crave now as an adult.

    I eat them raw out of the field. They are delicious!
